Soft Serve Banana Nice Cream

This sweet dessert is a tasty treat on hot summer days. Plus it’s dairy free so those avoiding dairy aren’t left out from enjoying frozen treats. The next time you have a few ripe bananas, peel and slice them and freeze on a cookie sheet. This recipe also make use of leftover canned coconut milk. My 3.5 year old son helped me make it and I think his favorite part was the instant gratification. There was no waiting around for it to freeze. All the more reason for runners to love this post run.

Soft Serve Banana Nice Cream


  • 4 frozen bananas, sliced
  • 4 dates, pitted
  • ½ cup canned light coconut milk
  • ½ tsp kosher salt
  • ¼ cup unsweetened coconut flakes


  1. Soak the dates in warm water for 5 minutes.
  2. Place the first four ingredients in a blender and process until smooth, scraping down the sides as necessary.
  3. Top each serving with unsweetened coconut flakes.
