Cauliflower Brain

Any fun Halloween plans? Even if you don’t have plans to go trick or treating, it can be fun to make spooky foods inspired by the occasion. Naturally many of the suggested recipes in magazines and Pinterest, center around sugary snack foods like Cereal Monster Hands and Bloodshot Pudding. Let’s try to boost your veggie intake, since there is a good chance candy bars are in your future. You’ll never look at cauliflower quite the same way, after you’ve turned it into a brain.

Ingredients:

  • 1 head cauliflower
  • ¼ cup olive oil
  • 1 ½ tsp chopped sage
  • 1 ½ tsp salt
  • ¼ tsp red pepper flakes
  • ¼ cup Parmesan cheese
  • ½ cup pizza sauce, warmed

Directions:

  1. Preheat the oven to 450.
  2. Trim cauliflower and cut a sliver from the center to create two “lobes”. Rub with olive oil, sage, salt, red pepper flakes.
  3. Wrap in foil and bake until tender, about 45- 50 minutes. Unwrap; sprinkle with Parmesan and broil until golden, about 3 minutes.
  4. Transfer to a plate and pipe pizza sauce for veins.
