Egg Roll in a BowlThis recipe comes together in under 30 minutes and it was one of the best “in a hurry” weeknight meals we’ve had in awhile. Most weeknight meals are pretty forgettable. I’m not really sure why this combination of foods is so tasty, but it’s a meal I’ll eagerly be making again. If you don’t like pork, feel free to swap the pork, for chicken, turkey or beef.

Ingredients:

  • 2 Tbsp coconut oil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 5 scallions, diagonally sliced
  • 1 lb ground pork
  • ½ tsp ground ginger
  • 14 oz bag coleslaw
  • 3 Tbsp Coconut aminos or soy sauce
  • Sea salt and pepper
  • Sriracha or garlic chili sauce, to taste
  • 2 Tbsp sesame seeds

Directions:

  1. Heat the oil in a large skillet over medium heat.
  2. Saute the onion, garlic and white portion of the scallions. Cook until the onions are translucent.
  3. Add the ground pork, ginger, salt and pepper. Saute until the pork is cooked through.
  4. Add the coleslaw mix and coconut aminos. Saute until the coleslaw is tender.
  5. Top with the scallion greens, sesame seeds and Sriracha before serving.
