This recipe comes together in under 30 minutes and it was one of the best “in a hurry” weeknight meals we’ve had in awhile. Most weeknight meals are pretty forgettable. I’m not really sure why this combination of foods is so tasty, but it’s a meal I’ll eagerly be making again. If you don’t like pork, feel free to swap the pork, for chicken, turkey or beef.
