Honey Mustard Chicken

Here’s a very simple recipe to have in your repertoire for the nights when you are going in a million different directions and getting dinner on the table is low on your list. With three main ingredients, you can put dinner in the oven in five minutes, giving you more time to do other things. I will often prepare this meal when I’m won’t be home at dinner time, but want to leave the house with dinner prepared for my family.

Honey Mustard Chicken

Ingredients:

  • 1/3 cup smooth Dijon mustard
  • 1/3 cup honey
  • 1 Tbsp olive oil
  • 2-3 lbs chicken thighs
  • Freshly ground pepper and sea salt

Directions:

  1. Preheat oven to 350. In a large bowl, mix the mustard, honey and olive oil. Add a pinch of salt and taste. Adjust flavors to suit your taste buds.
  2. Salt and pepper the chicken lightly and lay the pieces skin side up in a shallow casserole dish. Spoon the mustard honey sauce over the chicken. Sprinkle with rosemary.
  3. Bake for 45 minutes or until the meat is 175 and the juices run clear.
