Oregano Chopped Salad

I was craving this particular salad this week. Maybe it’s because I’m tired of roasted root vegetables and feel the need for a salad. Now mind you, this salad isn’t winning any awards for leafy greens or low calorie status. This salad tastes just like an Italian sub, minus the bread. I think what triggered the memory of this salad was the head of iceberg lettuce I’ve been buying every week. My son likes the crunch of iceberg, and so do I. This is a simplified version of Smitten Kitchen’s “Nancy’s Chopped Salad”.  I omitted the red onion, radicchio and chickpeas, but kept the herby garlic olive oil and red wine vinegar dressing. The salami and provolone were a nice splurge.




  • 4 cloves garlic
  • 1-2 Tbsp dried garlic
  • 2 tsp kosher salt
  • ½ tsp fresh ground pepper
  • Juice of 1 lemon
  • ¼ cup red wine vinegar
  • ¼ cup olive oil


  • ¼ lb provolone, sliced ⅛ inch thick then cut into ¼ inch ribbons
  • ¼ lb salami, sliced ⅛ thick and cut into ¼ inch ribbons
  • 4 medium pepperoncini, sliced into rings
  • ½ pint cherry tomatoes
  • 1 head iceberg lettuce, halved, cored and cut into ½ inch ribbons

Make dressing:

  1. Roughly chop the garlic and then add oregano, salt and pepper. Chop the mixture and use the side of a knife to make a grainy herb paste.
  2. Transfer the paste to a large salad bowl and add lemon juice and vinegar.
  3. Mix with a fork dissolving the the salt and add in oil and and whisk until combined. If you are making a small salad, transfer some of the dressing to jar to be used later.

Assemble Salad:
Gently fold the provolone, salami, pepperoncini into the dressing one at a time. Gently add the tomatoes and lettuce. Toss to combine everything and serve.
