Pork Verde Stew

I’m craving stew recipes as the weather turns cooler. With a stockpile of tomatillos on the kitchen counter, I recalled this fabulous recipe. Last night, I was tempted to serve the stew as soon as the pork was cooked, but the longer cooking time, softened and tenderized the meat. Bringing a large tray of toppings to the table, creates a stunning visual showcase to this spicy, comforting stew.

Pork Verde Stew


  • 8-10 tomatillos, husked and rinsed
  • 2 jalapenos
  • 1 large onion, cut into quarters
  • 4 garlic cloves, peeled
  • 2-3lbs pork loin, cut into 1 inch cubes
  • ¼ cup flour
  • ½ tsp salt
  • freshly ground pepper
  • olive oil
  • 4 cups chicken (or veggie broth)
  • 1 lime juiced
  • Optional toppings: sour cream, cilantro, avocado, sliced radishes, shredded cabbage


  1. Place oven rack 6 inches from broiler and turn it on high. Place tomatillos and jalapenos on a cookie sheet drizzling the pan and veggies with olive oil. Broil for 3 minutes. Turn veggies and return to the over for 3 more minutes. Next add the garlic and onion. Broil turning every 2 minutes until the tomatillos and jalapenos are blistered and the tomatillos are quite soft. Remove from the oven and allow to cool.
  2. Cut jalapenos in half and remove the ribs and seeds. lace all the veggies in a blender and blend until smooth. Set aside.
  3. Place the pork pieces in a large plastic baggie with the flour, salt and pepper. Toss to coat. Heat oil in a large pot until hot. Brown the meat in single layer in batches until golden on both sides. Remove and set aside, while cooking the remaining pork. Once it’s all been browned add the remaining pork, tomatillo mixture and broth to the pot. Bring to a boil and then reduce to a simmer. Cook, stirring occasionally, for an hour until the pork is tender.
  4. Add the lime juice to the soup and garnish with desired toppings.
