Pumpkin Poblano Casserole

Advertisements are flush with the pumpkin spice craze. Everybody wants in on the action. Why not turn to the perimeter of your grocery store, or local farm stand, to get the makings for this new variety of a squash casserole? Nothing artificial or manufactured in a food lab in this recipe. I love the earthy, spiciness of poblano peppers. Mix that with sweet red peppers and rich pumpkin for a tasty fall meal that might rise up the ranks in your pumpkin spice obsession.

Pumpkin Poblano Casserole


  • 2 poblano peppers
  • 1 large red pepper
  • 2 Tbsp olive oil
  • ¾ cup yellow onion, thinly vertically sliced
  • 1 ¾ lb sugar pumpkin, seeded, peeled and cut into ⅓ inch thick wedges
  • 2 large Yukon Gold potatoes, peeled and thinly sliced
  • 2 garlic cloves, minced
  • 2 Tbsp flour
  • 2 tsp dried oregano
  • 1 tsp ground cumin
  • Sea salt and freshly ground pepper
  • 1 can (12 oz) evaporated low-fat milk
  • ½ cup queso fresco, crumbled


  1. Preheat broiler to high. Place both pepper types on a baking sheet lined with foil. Place pan on top rack of oven. Broil for 12 minutes or until blackened and charred, rotate after 6 minutes. Remove from oven; loosely wrap peppers in foil; crimping edges to seal. Cool and then peel and seed peppers. Cut peppers into ½ inch wide strips.
  2. Preheat oven to 400. Combine olive oil, onion, pumpkin, potatoes and garlic. Toss, then sprinkle with flour and next 4 ingredients (through ground pepper). Toss to combine.
  3. Place ⅓ of pumpkin mixture in 13 x 9 inch baking dish, coated with olive oil. Sprinkle with ⅓ of pepper strips. Repeat procedure twice. Pour milk over vegetables. Drizzle a light layer of olive oil over the top.
  4. Cover with foil. Bake for 45 minutes. Uncover and sprinkle with cheese. Bake an additional 10 minutes or until potatoes and pumpkin are tender.
