If you follow me on Instagram, you may have recently seen the large stack of cookbooks I’d taken out from the local libraries. I love flipping through cookbooks, especially ones with wonderful photography, enticing me into the kitchen. This chili recipe was slow to gain my attention, but during
Sunday’s meal planning, I needed a big pot of something and this recipe fit the criteria.
I was pleasantly surprised. The quinoa blended in well with the traditional chili flavors. The best part was for three nights in a row, my 4 year old enjoyed a bowl. In fact, he told me he liked it and said I could make it again. I’m making it again this week. Fingers crossed that he’ll still like it. Hopefully you will too.
