My son has a voracious appetite for books, so we are frequently at the library. Our arrangement is after he visits the kid’s area we visit the “Mommy section”. I usually only have time to peruse the New Books. I eagerly snatched up Shalane Flanagan’s new cookbook, Run Fast. Eat Slow. Her cookbook is packed with images of tasty looking recipes. There is a heavy focus on vegetables and whole foods. I like that in the upper corner recipes are labeled to suit those following specific diets, i.e; vegan, dairy-free, gluten free. Personally, I like cookbooks that feature a little vignette before each recipe. For example, this recipe has a Mexican flair due to a poll taken on social media.
So in the spirit of the upcoming Boston Marathon and the 2017 racing season, I present you with this quinoa salad, Quinoa is the only plant food containing all nine essential amino acids. They play a big part in muscle recovery. Happy running and racing!
