Taco Tuesday! You may have noticed that tacos have gotten creative with their fancy fillings. Here’s a recipe with familiar ground beef and taco seasonings, but it incorporates greens so it feels trendy and a little less old school. You could serve this in a taco shell, but lately I’ve been gravitating towards meals served over romaine lettuce, as a way to boost my veggie intake. Plus now that the summer growing season is past, a cold salad with hot house tomatoes and cucumbers is not appealing. Most evenings my kids like the deconstructed meal, making warm salads to suit their fickle moods, even if is just two pieces of lettuce, a tomato, a spoonful of meat and tons of cheese and avocado
In a large skillet, heat the oil. Add the onion and saute for about 5 minutes until soft.

To serve, create a bed of shredded lettuce on each plate. Scoop a serving of the ground meat
mixture onto lettuce and add desired toppings.
