Fall Roasted Veggie Rice Salad

Just because the weather has turned colder, doesn’t mean we need to forgo salads. I adjust the ingredients (farewell tomatoes) and the preparation style. Like many salad recipes this serves as a template. Instead of broccoli, use brussel sprouts. Replace the wild rice with farro or bulgur. Butternut squash could replace the delicata squash, however delicate with it’s thin skin, doesn’t need to be peeled and has a shorter cooking time, making it an ideal choice for this salad.


  • 1 medium delicata squash
  • 1 medium head of broccoli, cut into small chunks
  • Greens (spinach, arugula, baby kale), chopped
  • 1 cup wild rice, cooked
  • olive oil
  • salt and pepper
  • 1 tsp paprika
  • 1 Tbsp lemon juice
  • 1 small garlic clove, minced
  • 1 tsp white wine vinegar
  • 4 tbsp olive oil


  1. Prepare the rice according to the directions.
  2. Preheat oven to 400. Slice the ends of the delicata squash and cut in half. Scrape out the seeds and cut into ½ inch slices, then cut each half ring 3 chunks. Drizzle a baking sheet with olive oil, add the squash, sprinkling with salt and pepper. Roast for 20-25min, until the underside is golden. Remove from the oven, turn the chunks over and roast for another 10 minutes, until browned at the edges and tender at the center.
  3. To a second baking sheet, drizzle with olive oil. Add the broccoli and sprinkle with salt and pepper. Roast for 10 minutes. Turn and roast for another 10 minutes.
  4. To a large salad bowl, add the chopped greens. As the vegetables and rice are completed and cooked, place them over the top of the greens allowing them to wilt.
  5. To make the salad dressing, whisk together the paprika, lemon juice, garlic, vinegar and olive oil in a small bowl.
  6. Finally, toss some of the salad dressing with the vegetables and rice. Serve warm.
